On to another school year...

Emma had her first day of her 2nd year of preschool today. :) She gets to go to Head Start this year and she LOVED her first day there. She has some really great teachers and lots of cute kids in her class. We are going to miss having Emma around - she goes to her preschool Monday-Friday from 8:30 to 12:30! Becca cried the whole way home after dropping her off this morning because she didn't want Emma to go. It was a rather miserable drive home, but also kind of cute that Becca misses her sister so much. They really have become best pals lately. I love listening to them have funny conversations when they are both in bed for the night. They're so cute.

This evening I took the girls to Pump It Up for their FREE play night! They played for a whole hour and had a blast - I had a blast just knowing it was all free. hehe. I was very impressed with Becca... she climbed up to the top of the big slide and went down all by herself several times. She also braved through a couple inflatable obstacle courses with a huge smile on her face - also all by herself. She's getting so big!

So, this past Friday we did a little celebration amongst ourselves because summer was officially ending and the school year about to begin. We had cupcakes (with Emma's request of purple frosting) and ran around in the sprinklers in the backyard. Even I ran around and got soaked in my clothes... the girls were being lame and didn't want to get wet, so I tried to show them how fun it is! Emma fell for it and had a great time, but Becca just ran in once (against her will) and then preferred to sit on the sidelines with daddy. In the end we all enjoyed our cupcakes (I enjoyed a few too many). Goodbye summer and hello to school days!

Things that make a mommy happy

Emma gave her very first Primary talk on Sunday and I'm so proud of her! She's getting smarter and more clever every day. :) She practiced her talk several times this past week and she was able to read the whole thing by herself. We practiced for daddy (and the camera) just before leaving for church that morning.

The concept of families being together forever must really be sinking in for her... yesterday her daddy asked her what one of her favorite things is... Emma replied, "Snacks!" She then said, "but do you want to know what my SUPER DUPER favorite thing is?!... that our family will be together forever!" Happy to know that having an eternal family inches out snacks in the favorite things scale. :) Emma's so great.

Jake is also getting smarter and more clever every day. :) He started rolling over at about 3 1/2 months and now is just rolling all the time. He's recently discovered he can get to just about anything on the floor by rolling to get it. He's even decided he prefers sleeping on his side or tummy. I always put him to bed on his back, but whenever I check on him later he's usually on his belly. He's also decided he doesn't want his paci anymore! With my girls I had to get rid of them through little ceremonies of throwing them all away and waving bye-bye when they are almost nursery age... but Jake is his own man and has rid himself of them on his own. He just refuses to suck on them - This makes me very happy! I've always had a love/hate relationship with pacifiers and this way it just forces me not to worry about them anymore. Also, Jake is officially sleeping through the night!! No more night feedings... hallelujah! He's now sleeping for a full 12 hours in a row without crying for mommy. This makes me extremely joyful! :) A rested mommy = a happy family.

Oh, and I shouldn't leave Becca out! Hmmm... let's see... she makes me happy because she shares my love for sweets (and is just an all around sweet little girl).

mmmm... am I the only one who thinks that cookie dough tastes even better than the actual cookie?!

Good friends, a Big popsicle, and Recipes

Once again, I have a random array of things on my mind that I'll pleasure you all in blogging about... :)

First of all, Taya came into town last week for a few days, and I can't tell you how happy it made me to see her lovely face! We swam at her place here in town (and fun to discover that it was less than 5 minutes from our new home) and it brought back so many pleasant memories. :) Emma was most happy to get to bring Trevi to our house to play. Thanks for including us in your visit Taya and Tessa! We miss you already.

Speaking of wonderful friends, I've been so glad to get to do some girls nights the last few weeks with so many awesome girls from the ward we recently left (it's definitely nice to not have moved very far and to still have some girlfriends to still see, especially as we adjust to a new ward) We gathered for SYTYCD results shows on Thursdays and when that ended we decided to start meeting up at Sonic so we could still get together and talk about silly stuff. :) As a mommy who recently doesn't get out much, these short get-togethers are so needed! I now have the task of trying to acclimate into a new ward and try to make new friends (so hard!). But luckily, this ward is friendly and outgoing and fun and I'm already quickly getting to know many kind and talented girls. As of late I've been greatly appreciating my associations with the women around me. Between my mom, sister, mother-in-law, sister-in-law, friends, and Relief Society, I feel like I have the greatest support system and resource for being the best mom and wife I can be. It's a good feeling to have people you can learn from and relate to in order to continually improve, yes? .... is it just me, or am I turning into quite the reflective person? I'm delving into some deep stuff lately. Hmmmm... maybe I need to get out more? Spending lots of time in a house full of kids makes for a contemplative susan.

The ice cream truck sings its tingy, merry tune at least a couple times each week down our street... so, it's only a matter of time before we break down and run out there for a treat. Most recently I ran for some quarters and we quickly got out to the truck-o-goodies (kids in bare feet). The girls and I stared at our purchasing options and finally settled on a very large watermelon popsicle. I hadn't grabbed enough coins for more than one, so when we headed inside I was faced with trying to come to a no-fighting solution for how to share the one treat. I settled on using the timer and the girls (surprisingly willing) agreed to take turns. Well, this thing was huge, so in the end, even with them sharing it, I ended up eating half of it. It was good.

This may be embarrassing to admit, but we've never been good at consistent Family Home Evenings. But lately, we've turned a new leaf. We've held FHE every week for the past 2 months.. and I can really tell a difference in the spirit in our home. Emma is definitely to an age where she really appreciates it and looks forward it. She often asks if we are going to do FHE and also what treat we'll eat (that's very important). She's been taking an active role too in deciding on our treat and planning out ingredients we need to buy. She's going to be a good little mommy someday! And now that we have a piano, tonight Ben was even able to pluck out 'Jesus wants me for a sunbeam' while we sang along. I think one of my hangups in the past about sticking to a weekly FHE was my preparation expectations. I would often let it slide because I hadn't taken the time to prepare something well ahead of time. But now, I'm trying to not let my perfectionist tendencies to get in the way. There's been a couple weeks where I didn't plan anything until a couple minutes before we sit down together as a family by whipping out the Friend and quickly finding a little story or message to share from that. We spend most of our Family Home Evening time singing songs together anyway, so the 'lesson' is very short and sweet!

And last, but not least, I will share what I've learned regarding bread making (and tortilla making). Understand that I do not feel like an expert by any means - I've only just started really delving into my kitchen a few weeks ago, so I have so much to still figure out. But I will share anyway, since so many asked. :) I've tried a few bread recipes (all whole wheat) - they vary greatly in the amount of honey/sugar, and oil that is added. This one is on the leaner end as far as sugar and oil (my mom's recipe is even less than this and also good), but still very sweet and a good tecture. Just know that you can use other recipes that have even more oil and honey and I'm sure they will be even sweeter and tastier. This recipe is a good middle ground for me and we all really like it. And like I've said before, the next step will be to grind my own wheat, but first I'll need a wheat grinder... maybe for Christmas!
Click here for the bread recipe.

And now for tortillas - I am currently using this recipe. It says specifically at the top to not substitute the lard for shortening, but I am a rule breaker... I've been using shortening, because I have that already in my cupboard. :) The tortillas turn out great! Some tips however - we learned from Good Eats (a great Food Network show!!) that as you cook your tortillas and then place them on a plate, to drape a semi damp cloth over the top of the stack. From what I have experienced, this is a fool proof way to keep your tortillas from crisping up (because of course you want to be able to roll up your tortillas, whether for enchiladas, fajitas, tacos, etc). If I'm not going to eat them right away I wrap them in foil and store them in the fridge (I'm afraid they may mold if left out at room temp, but I haven't experimented with that myself). They will still be soft even just taking them out of the fridge - and then you zap them in the microwave for a very short time and they warm right up and stay soft - awesome! Also, if you are really into it, you should use a tortilla press. For me that's what takes the longest - is rolling them out with a rolling pin - they rarely turn out precisely round... often amoeba shaped, rather. ;) So a tortilla press will speed up the process and keep them much more uniform and round in shape. I see another Susan Christmas present in the making! :) Last tip - this recipe makes 24 smaller sized tortillas (great for soft tacos or fajitas) - if you want enchilada size, you'll definitely want to make each of your dough balls twice the size, so the recipe will only make 12 enchilada sized tortillas.

So there you go. I've spilled the beans... that's everything I know! (and it's not much). If any of you have your own tips and tricks with bread and tortilla making, please share!

A rather thoughtful post

Jacob seems absolutely huge to me... this must be because my girls were both very tiny as babies (and are still rather tiny today). Well, at Jake's 4 month well-visit his height was 24 1/2 inches and weight at about 14 1/2 lbs. The doctor says this puts him in the 50th %ile for both. So, there you go - in my eyes, he is a monster baby, but it turns out he is just where he should be (if that can really be measured). I've never had a baby that was in the 50th- they've always been 10th or smaller. So this is new! :) I just LOVE my little Jake. He is very good natured and happy. He is extremely quick to smile and always a flirt (especially at church to whoever is sitting behind us). He is a great sleeper - he's down to one feeding during the night (at 1 or 2 am), which is pretty good, considering he goes to bed at 5:30 and wakes up for the day at 6:30. He's also so cute in his crib or playpen - he rarely cries for me when he gets up from a nap - I often will find him after his nap just happily playing with his feet or sucking on his fingers. What a wonderful little boy he is! I give him exorbitant numbers of kisses each day - plus all the kisses and loves he gets from his sisters and daddy. He's a lucky boy, I guess - but I really feel like the lucky one... he's just a joy. So, even though I whine and complain about how hard having 3 kids is... I am also very happy because my kids are great. :)

I've been keeping up the bread-making and it's getting easier and easier. We make 2 loaves on Mondays and 2 more on Thursdays and that gets us through the week just great. At first I felt like I was slaving away in the kitchen to get bread made, but now I have all the ingredients I use in one place in my cupboard, so I pull them out quick, measure it all out into my mixer and then it's just a matter of waiting for it to rise a couple times - during which I do other things. And the kids love to watch and help and we're all learning quite a bit as we go. I even made tortillas for the first time last week and it was surprisingly successful! And I made blueberry jam over the weekend. Plus we've had many rounds of cookie making... mmm... Hello - My new name is Little Susie Homemaker. :) I don't know what it is lately, but I am really enjoying the baking and cooking and getting a hold of my inner mommy skillz. Part of it may be out of necessity as we adjust to our new 'residency salary', but oddly I am also really enjoying living on our modest budget and being surprised at how far a small amount of money can stretch. I feel like the things I'm learning and experiencing right now will help me throughout the rest of my life. Things are good... life is good. I'd love to hear thoughts from you good friends out there going through residency and how it's shaping you as a mom.

I'm being very reflective this evening, wouldn't you say? It must be that Ben is away at work and the kids are in bed, and I have a lot on my mind. :)
